It seems like my love for cooking really shows up in the fall...
So, one day in early fall every year,
I get out the soup pot
and make Aunt Evelyn's chili recipe.
It lasts us through the winter because I
make a double batch and freeze a bunch.
Today was chili day....I love chili day.
It means a good homecooked meal that everyone will eat.
Even the little one who doesn't eat much of anything will eat chili!
And, to top it all off, it was the new Amazing Race day too!
We love the Amazing Race around here.
Aunt Evelyn's Chili
3 Cups Red Beans, I use Pinto beans 6 cups water
2 or 3 bay leaves 2 lbs ground beef
1/2 lb pork sausage 3 large onions, chopped
3 minced garlic cloves 2-1/2 quarts tomatoes
3-8 oz cans tomato sauce 1 Tbsp chili powder
2 small chili peppers 3/4 tsp curry powder
1 Tbsp powdered cumin 1 Tbsp salt
1/4 tsp tobasco
Wash beans thoroughly and cook until tender with water and bay leaves. Brown meat, onions and garlic. Add beans, along with remaining ingredients. Simmer together 1 hour. Even better the next day!
There you go!
Simple as can be...
if you choose to double it make sure to have a big ole soup pot.
It makes ALOT of chili. yummy, yum, yum.
