I thought I would share the recipe for the chowder that my sweet niece made for the vendors at the show. I made a double batch the other day and it was so yummy! Perfect for this time of year and with plenty of good stuff in it....
Myrna Milne's Broccoli and Cheese Chowder
1 quart water 3 chicken bouillon cubes 15 ounce jar of Cheese Whiz (I use Walmart's brand) 1/2 cup flour 1/2 cup butter 3 grated carrots (I use either match stick or baby & chop in my food processor) 1 medium potato (washed, pealed & diced) 1/2 yellow onion (I chop in my food processor) 1 stick of celery (I chop in my food processor) 1/2 tsp all purpose seasoning (I use Season All) 1 head broccoli (chopped)
In a microwave safe bowl: steam potato, onion and celery for 10 minutes. Boil water and bouillon. Add cheese whiz. Saute' & brown flour and butter. Add to water mixture. Add steamed veggies. Add broccoli and seasoning. Turn into crock pot. Add more water if too thick. Cook in crock on high for 1 hour.
**if you want the soup chunky, don't chop the onions, carrots - dice the same as the potato & leave matchstick carrots whole.
**I usually add water once it's in the crock pot, because I like it more soupy. I also cook it on low for a few hours instead of high. I think the flavors marry better.
***If you double this recipe it's going to take 2 crockpots...there's a lot of soup!
